Chicken Tortilla Soup
Serves: 8
Cook/Prep Time: 2 Hours

Ingredients:
- 1 can Rotel tomatoes
- 2 cans tomato soup
- 1 red onion chopped
- 2 garlic cloves minced
- 2 cans beef bullion
- 2 cans chicken broth
- 1 can corn
- 1 can black beans
- 1 tsp. cumin
- 1 tsp. salt
- 1 tsp. chili powder
- 1 cup cilantro
- 3 cups diced cooked chicken
- shredded cheese (topping)
- tortilla chips(topping)
- sour cream (topping)

Instructions:
Add all ingredients through the chili powder to large stock pot and bring to boil. Reduce heat, cover and simmer 1 hour. Add cilantro and chicken the last 15 minuets. Serve with shredded cheese, crushed tortilla chips and sour cream to taste.

Notes:
When traveling, place hot soup in a disposable container and all toppings on the side to assemble when you arrive.
