Black Bean Sweet Potato Burritos
Serves: 4
Cook/Prep Time: 45

Ingredients:
- 3 cups sweet potatoes (peeled and diced)
- 1/2 onion (chopped)
- 2 cups cooked black beans
- 1 tsp ground cumin
- 1/2 tsp salt
- 3/4 tsp ground cinnamon
- 8 flour (or wheat) tortillas
- 1 1/2 cups cheddar cheese

Instructions:
Saute potatoes and onion in frying pan with 1 tbsp oil and water or apple juice as needed to prevent sticking, Add beans cumin, cinnamon and salt and cook until heated through, Divide bean mixture and cheese among the tortillas and roll up. Place in 9x13-inch baking pan. LIghtly spray with olive oil if desired. Cover pan with foil and bake at 350F for 20-25min. Garnish with sour cream, salsa, fresh cilantro
